Frontline Biography

"I Started in the Kitchen."

Forty years in hospitality operations: from apprentice chef in 1985 to managing director level P&L responsibility and group compliance lead across 30+ pub estates.

Member of the Institute of Hospitality (MIH) · Birmingham, West Midlands

Understanding the Problem From Every Angle

"Most consultants analyse hospitality from a desk. I learned it at the stove, on the cellar floor, and behind the bar."

David trained at catering college before working as a professional chef from 1985 to 1992. In the kitchen, he learned how every uncalibrated portion, trimmed sirloin, and unmonitored bin bag directly destroys gross profit.

In 1992, David joined his father in stocktaking, beginning a 30+ year dedication to independent stock analysis and variance investigation. Over four decades, his career has spanned:

  • 1985 Professional Chef: Grounded in recipe costing, prep yield analysis, butchery percentages, and kitchen portion discipline.
  • 1992 Stocktaking Specialist: Partnered with his father in commercial stock auditing, establishing rigorous cellar and bar verification protocols.
  • 2000s Allied Domecq & Festival Audit: Conducted high-stakes stock audits for Allied Domecq, UK national pub chains, and major live music festivals across Britain and Europe.
  • 2010s Hilton Birmingham Metropole: Six years on the operating frontline overseeing food and beverage controls in one of the UK's highest-volume conference and banqueting hotels.
  • 2018 Marco Pierre White Birmingham: Held full P&L accountability running operations, proving the commercial viability of uncompromising margin controls.
  • 2020s RedCat Hospitality Group: Directed unannounced financial and operational audits across an estate of 30+ venues, establishing governance and recouping lost margins.

Why Clarity Exists

Most businesses do not have a sales problem—they have a visibility problem.

David has stood in every pair of shoes: he knows what a head chef feels when food margins slip, what stock reports reveal and what they conceal, and what general managers say when explaining away negative variances.

Clarity provides pragmatic, site-level investigation that locates lost margin, explains it commercially, and builds the controls to ensure it never leaks again.

Operating Creed

"Hospitality Profitability Is Built on Boring Things."

There is no shortcut, magic spreadsheet, or flashy AI dashboard that fixes poor operational control.

Real hospitality profitability is built on doing simple, unglamorous things with relentless consistency:

  • Checking deliveries against invoices and weighing goods in before signing.
  • Insisting on strict recipe specifications and portion measuring tools at the pass.
  • Logging every pint of line-cleaning waste and drip tray spillage daily.
  • Reconciling yesterday's bar takings this morning, rather than waiting for next month's report.

The best businesses get the fundamentals right every single day. That is the discipline Clarity embeds in your team.

"David established authority from his visits, was respected by his peers and left clear written instructions to drive progress. The results over the 2–3 years were impressive. I'd recommend David to anyone looking to improve controls, margins or operational performance."

Group Chief Executive, RedCat Hospitality
